We are pleased to present the Carta del Turista Enogastronomico Sostenibile (CarTES), a new initiative promoted by the Associazione Italiana Turismo Gastronomico in collaboration with the Federazione Iter Vitis, the European Cultural Route Council, the Associazione Nazionale Città del Vino, the Associazione Nazionale Città dell’Olio, the Federazione Nazionale delle Strade del Vino, dell’Olio e dei Sapori, and Terranostra (the Association for Agritourism, Environment, and Territory of Coldiretti). CarTES is a practical tool that enables travelers to experience food and wine tourism while respecting the environment, culture, and local communities. The purpose of this document is not simply to suggest what tourists should do before, during, and after their journey, but to provide a tool that educates, promotes, and encourages sustainable behaviors by explaining the reasons behind them and the opportunities these changes can create for the individual, society, and the environment. The Carta discusses the increasing need for sustainability in the current context, highlighting international initiatives on sustainability, the impacts of tourism and tourists on climate change, and the actual behavior and desires of travelers.
